Allergen-Free Banana Muffin and Bread Recipe

Finding recipes safe for those with food sensitivities or allergies can be quite tricky. Though bananas can be a trigger food for some individuals, this recipe takes an old favourite and makes it relatively tolerable for most individuals. This recipe is void of your traditional flours, eggs, and dairy! Try it for yourself and see how it measures up.

Banana Muffin Recipe

Ingredients:

  • 1 cup of Brown Rice /Almond Flour
  • 1 cup Quinoa flour (gives a moist batter)
  • 1/4 cup Sugar
  • 4 tsp. baking powder/tapioca starch
  • 1 tbsp. chia seeds ground
  • 3 tbsp. water
  • 2/3 cup Coconut Milk
  • 4-5 ripe bananas
  • 2 tbsp. Coconut oil melted
  • Optional: 1 cup of chocolate chips

Directions:

  • Preheat oven to 400 degrees
  • Blend and mix together flour, sugar, and baking powder/ tapioca starch.
  • In a separate bowl, take ground chia seeds and water and beat together until gel like consistency. Add in milk, mashed bananas, and melted coconut oil.
  • Combine together your “wet” and “dry” ingredients (i.e. your coconut oil mixture and flour mixture). Stir until well combined. If you want to add chocolate chips, add them at this point.
  • Line your muffin cups with muffin baking cups or grease your pan, and add approximately 1/4 cup of batter to each cup.
  • Bake in preheated oven for 30 minutes or until cooked through.
  • Yield: 12-16 muffins

Banana Bread Recipe

Ingredients:

  • 1 cup of Brown Rice /Almond Flour
  • ¾ cup Quinoa flour (gives a moist batter)
  • 2 tsp. baking powder/tapioca starch
  • ¼ tsp. baking soda/tapioca starch
  • 1/3 cup coconut oil
  • 2/3 cup sugar
  • 2 tbsp. chia seeds ground
  • 6 tbsp. water
  • 4-5 ripe bananas

Directions:

  • Preheat oven to 350 degrees
  • Blend and mix together flour, baking powder/ tapioca starch, and baking soda/ tapioca starch.
  • In a separate bowl, cream coconut oil and gradually beat in sugar.
  • In another bowl, take ground chia seeds and water and beat together until gel like consistency. Add this mixture to your coconut oil and sugar mix combining well.
  • Combine together your “wet” and “dry” ingredients (i.e. your coconut oil mixture and flour mixture).
  • Finally add in 4-5 ripe, well mashed bananas to mixture.
  • Pour your mixture into a 9” by 5” loaf ban that has been lined with parchment paper and let sit for 20 minutes.
  • Bake in preheated oven for 60 minutes or until cooked through.

Thanksgiving with a Food Sensitivity

Individuals with a food allergy/sensitivity may struggle with figuring out what is safe to eat while trying to partake in the festivities. More can be done to accommodate when you are making the meal, but when you have less control over what meals are being planned it can pose quite the challenge.

Thanksgiving at Home

As mentioned above, having a bit more control over the meal that is planned is beneficial due to being able to prevent cross contamination, lack of selection, and contamination period. Making sure to thoroughly clean items such as cutting boards, utensils and counters before working on safe food items is important to prevent cross contamination. Making a variety of items that are safe help those individuals who cannot have certain foods feel more relaxed table because there are more options and less stress over what can or cannot be eaten. It is also worth considering the question, “is thanksgiving all about the turkey?” Do you need the traditional foods eaten at thanksgiving or can you create a new tradition for your family? This concept in itself might help to take the stress away from the holiday.

Thanksgiving Away

Celebrating thanksgiving at another individual’s home poses many challenges to avoiding food sensitivities. Some planning before the event is important on your part. Offer to bring a couple of safe foods in the event that you may not be able to eat certain food items. This also provides an opportunity to spice up or add a bit of variety to the meal. Some food sensitivities can be brought to the attention of the host, so they can attempt to provide a couple of safe foods, but it is best to not push the issue and demand everything be safe for you to consume. Offer to help them to prepare a safe meal if they struggle with how to avoid certain foods that you may be sensitive to. Ultimately, focus on what you can eat rather than becoming discouraged at what you can’t eat, and focus on the time spent with your loved ones and the reason for the holiday.

Thanksgiving Meal Swaps

  • Regular potatoes – sweet potatoes
  • Stuffing – stuffing made with gluten-free breads
  • Cranberry sauce – make cranberry sauce from scratch
  • Gravy – use arrow root powder/starch/flour instead of regular flour to thicken (2tbsp of arrow root powder to 1 cup of liquid)

5 Foods to Avoid when trying to Lose Weight

Girl - Weight LossWeight loss involves more than just taking a silver bullet pill. It involves diet and lifestyle changes that can be difficult for some to achieve. If you are one of these individuals that struggles with weight and needs assistance in this area, please seek medical advice, including a naturopathic doctor, in regards to your weight loss goals. However, avoiding these 5 food types could provide aid as well:

  1. High caloric and high sugar drinks – This includes most fruit juices, lattes, and alcohol. These can act as empty calories and cause blood sugar spikes that leave you fatigued and without the energy to make it through the day and even get in some extra activity time. These drinks may also dehydrate you which can further complicate weight loss.
  2. Processed foods – this includes such items as sandwich meats, boxed foods, etc. These foods are often high in salt, carbohydrates, and fillers that can prevent you from losing those extra couple of pounds.
  3. Foods that you may have a food sensitivity to – these foods are not the same for everyone and can be determined with the help of a naturopathic doctor. Some naturopathic doctors provide a blood test to determine the results. When losing weight, I find it more reliable and efficient to use a dietary method to determine the food sensitivities for you.   4. Refined carbohydrates – this includes cereal, bread, pastries, cookies, etc. Especially when these foods are eaten alone and without a protein, they can cause blood sugar spikes and lead to excess sugar in the body which is retained as fat.
  5. Candy and high sugar snack foods – These items are fairly self – explanatory. Candy and high sugar snack foods do not provide nutritional aid. Avoiding these and only having them in moderation can help individuals work closer towards their weight loss goals.
